The name of the vineyard Les Mures (1ha) is not a reference to the French word for blackberries ''les mûres''. But to the Latin word for ''prominent rock'' from which the word morene (accumulation of mountain debris) is also derived. The climat Les Morats which is also located in the Davayé and the very famous wine village Morey in the Côte de Nuits, are also derived from this word. It should therefore come as no surprise that these stones can be found in the vineyard. In addition, the soil consists of salty clay and marl and is very calcareous.

Most of the vines are on a very steep slope (30 to 35%) with northern orientation, 240 to 270m above sea level, in the locality of Davayé. The age of the Chardonnay vines varies between 15 and 85 years. The grapes are harvested by hand and after pressing, alcoholic fermentation takes place in two parts. One part is fermented in temperature-regulated oak barrels, this to reveal aromatic complexity. The second part in stainless steel tanks to let the fruit speak for itself. Both with wild native yeasts. MLF is spontaneous and complete.

The wines mature for 8-10 months on lees and are assembled and bottled before the following year's harvest.

This produces a bright straw yellow wine with intense aromas, think: Lime, apple compote, acacia, pear and bergamot. On the palate quite straight, rich, round and soft with a juicy lingering finish where minerality shows through.
