''Crays'' is a reference to the stony slopes and pebbly soils. This term and its derivatives are the most common names for wine terroirs in Burgundy. Since 2020, this vineyard has had premier cru status.
The plot area is 1ha and is located at the foot of the rock/slope just behind Domaine Carrette in the town of Vergisson. The vines are 360 to 400 metres above sea level with a gradient of 30 to 35 degrees.
The grapes are harvested by hand and alcoholic fermentation takes place in 228-litre oak barrels, 10-15% of which are new oak. This wine is also fermented with wild native yeasts and MLF is again spontaneous and complete. The wine matures for 10-12 months in barrel on lees and is bottled before the following year's harvest.
This results in a beautiful straw yellow wine, the aroma exudes aromas of white peach, apple compote, citrus zest, white flowers (hawthorn, chamomile), with a touch of toasted and sweet spices. On the palate, a delicate texture with pleasant freshness.
The wine can be drunk two years after bottling but for the perfect harmony, it can rest easy for a few more years.
