The cuvée Moulin à Vent Les Vieilles Vignes is a blend of nine plots covering about seven hectares or half of the Pierres Roses estate. The vineyards were planted between 1910 and 1955 and lie in a strip around the Moulin à Vent hill. The north wind gives this wine great freshness. The soil is shallow and consists mainly of white and pink sand from the decomposition of pink granite and quartz.
The grapes are harvested by hand, with 40% whole bunches. Fermentation lasts 3 weeks in open vats with very gentle extraction. The wine matures for 15 months in oak barrels. 100% Gamay
