Domaine Jean Pascal is located in Puligny-Montrachet in the Côte de Beaune. The estate has 15 hectares spread across Puligny-Montrachet, Meursault, Volnay and Auxey-Duresses. It produces 75% white wines and 25% reds. It is a classic estate with a modern edge. The wines are made in the typical Burgundy style and do not try to pretend to be anything other than what they are. A producer of class with elegant wines.
This fantastic Bourgone Blanc is made from grapes from 4 lieu-dits: Champs Gauthey, Les Riaux, Les Equinces and L'Orme Les Bergeries all located southwest of Meursault and Chassagne. Covering a total area of just under 2 hectares, the vines are on average 19 years old and stand on limestone/clay soil.
After pressing, the wine goes into 228L barrels to rest and stabilise. This is also where the alcoholic and malolactic fermentation will take place. The wine then matures for a further 11 months in oak, after which it is racked and aged for another 4 to months in barrel before bottling.
