Domaine Jean-Noël Gagnard is currently managed by Caroline Lestimé, who also runs her négociant business alongside this domain. Domaine Jean-Noël Gagnard manages 9 hectares of vineyards, mainly in the Chassagne-Montrachet region. Caroline produces wine in the same way as her father, although we can see changes recently. In particular, the vineyards are worked in a biodynamic way. The wines have a classic character and have no formatting. The definition of a great Burgundy producer.
This 1.06-hectare plot is planted exclusively with Chardonnay. Located in the southern part of the vineyard, it faces south-east and has a steep slope at an altitude of 300-310 metres. The terroir is characterised by shallow, gravelly soils resting on Bathonian rock. The vineyard has been farmed organically since 2014, using biodynamic methods to ensure careful viticulture. During vinification, grapes are carefully selected, pressed and allowed to rest for 24-48 hours. Primary and malolactic fermentation is carried out in used barrels at 18°C with ambient yeasts. The wine is then transferred to the underground cellar, where it matures for 18 months on lees in barrels, 33% of which are new. Finally, the wine is vinified with casein and lightly filtered if necessary.
