Of all the Domaine 47°N 3°E wines, the Chablis Premier Cru Côte de Savant is the one that bears his stamp most strongly. As Côte de Savant is a locality in the Beauroy appellation, he selects the vines to make this cuvée. The grapes are harvested by hand and rigorously sorted to ensure that only the healthiest, ripest fruit is used. The motto at the sorting table is: "Imagine that the press is your stomach, so keep the grapes you want to eat and throw away the rest".
After 36 hours of natural settling at low temperature, the clear juice is vinified in 500-litre Burgundy oak barrels, where it undergoes natural alcoholic and malolactic fermentation. Aged for 12 months in these demi-muids, the wine is lightly filtered and then bottled.
