Planted in 2000 by his father, Christian Michaut, this 39-acre vineyard in a micro valley in his home village is part of the birth of Domaine 47N3E.
It's a plot steeped in history, planted with rootstocks generally reserved for the Grands Crus. These rootstocks adapt perfectly to the plot's silt and clay-rich soil, but are demanding and sensitive to disease pressure, which means I have to work these vines separately.
Cairn also requires special attention at harvest time, to ensure that the grapes are picked when fully ripe. The grapes are pressed immediately, and the clear juice is vinified in stainless steel vats. Gentle fermentation is regulated by the yeasts and bacteria naturally present in the grape juice and in the cellar...
Cairn is a Chablis with a distinctive personality. After alcoholic fermentation, it is matured for 12 months in vats and new oak barrels from the Bertanges national forest.
