This domain is run by Guillaume Michaut. He values terroir more than his own, hence the domain's name. He strives to create each cuvée as a fair balance between the typicality of the soil, the character of the grape variety and his personal intervention.
This Petit Chablis comes from a clay-limestone soil with white marl gives it a chiselled, mineral fullness.
The 4.6 hectares of vines I planted are grown uncompromisingly following the same philosophy as the estate's other plots, with biodynamic and organic viticultural methods.
The hand-picked grapes are sorted immediately after harvest. Vinification then takes place in an underground cellar (with natural temperature control), and the clear juices are vinified in stainless steel vats. Gentle fermentation is controlled by the yeasts and bacteria naturally present in the grape juice and in the cellar. To give this Petit Chablis its full personality, the wine matures on its lees.
