Winemaking in Champagne was brought up on Sébastien Daviaux. As a small child, he walked with his grandfather through the family's vineyards in Chouilly, Cramant and Cuis. These were different times. Champagne was far from the status it has acquired today; it was mostly hard work, with the harvest as its reward.
Today, Sébastien proudly continues the work of his grandparents and parents. The terroir, shaped by his ancestors' work as vintners. Situated just below Épernay, the villages are the gateway to the prestigious Côte des Blancs. This is where Chardonnay rules!
After leaving the Lycée Viticole d'Avize, Sébastien took over from his parents since 2014. He soon noticed that growing methods had evolved. "He who wants to get far, takes good care of his horse," became his adage." By respecting nature, the vine rewards them with beautiful grapes.
Sébastien Daviaux is therefore Viticulture Durable and Champagne certified as well as a Vigneron Independant. His goal is to translate authenticity, passion, and tradition into his wines.
