Caroline Lestimé is not an unfamiliar name. We know her, of course, from Domaine Jean-Noël Gagnard. When we heard she was working on this project, we knew it had to have a place in our portfolio. Maison Caroline Lestimé started in 2016, allowing Caroline to experiment with her own creativity and expression. Grapes are sourced from small circles and then experimented with different techniques. The white wines are raised on wood with almost no bâttonage. The red wines are aged on wood for 18 months. Wine certification begins with the 2021 vintage
