Caroline Lestimé is not an unfamiliar name. We know her, of course, from Domaine Jean-Noël Gagnard. When we heard she was working on this project, we knew it had to have a place in our portfolio. Maison Caroline Lestimé started in 2016, allowing Caroline to experiment with her own creativity and expression. Grapes are sourced from small circles and then she experiments with different techniques.
This wine is made from Chardonnay vines planted in 2010 and comes from the northern part of Chassagne. The vineyard lies low on the slope and faces east, at an altitude of 250 metres and has a clay-limestone soil enriched with iron and manganese. Since 2014, the vineyard has been organic and biodynamic. During vinification, the grapes are sorted, pressed and allowed to rest for 24-48 hours. Primary and malolactic fermentation are carried out in used barrels at 18°C. The wine is then transferred to the underground cellar, where it matures for 12-15 months on lees in barrels, 0-30% of which are new. Finally, it is vinified with casein and, if necessary, lightly filtered to ensure a harmonious expression of the terroir and grape variety.
