The grapes for this Blanc de Blanc come from chalky soil in Grand Cru vineyards of Chouilly (85%) and Cramant(15%). Assembled with 50% reserve from 2018 and 2019 the remaining wine is from the 2021 harvest with partial malolactic fermentation . The wines lie sur lie for a minimum of 36 months with only 3 grams of residual sugar per litre. This produces a beautiful fresh Champagne with citrus notes, green apple, but also some riper fruit, brioche and a nice integrated mousse.
